Fish Tacos with Mango Salsa

Ingredients:

Mango Salsa:

  • 2 fresh mangos, peeled & diced
  • ½ cup finely diced red onion
  • 1-2 jalapeños, seeds & membrane removed, finely diced
  • ⅓ cup chopped cilantro leaves & stems
  • 2 limes, juiced
  • ½ teaspoon kosher salt

Fish Taco

  • 1.5 lbs cod
  • 8-10 corn tortillas
  • 1 tsp salt
  • 1 tsp garlic
  • 1 tbsp honey
  • chili powder
  • 1 ½ tablespoons avocado or vegetable oil

Instructions:

  • In a medium bowl, toss together the mango, onion, jalapeño, cilantro, lime juice, and salt. Set aside.
  • In a large bowl, toss together cod, oil, honey, chili powder, and salt.
  • Pan fry or grill the filets over medium high heat until cooked through.
  • Assemble and enjoy!
